Spicy Swede Soup

Spicy Swede Soup

A simple, easy to make soup made with a range of spices. Thanks to Charlotte T.

Ingredients

5oog (approx.) of swede, peeled and cubed

1 medium sized onion, chopped

2 tbs oil (of your choice)

750ml (approx.) of hot stock (vegetable or chicken)

2 good teaspoons of following ground up spice mixture.  It is called Phyl’s Masala.

1/4 tsp Cinnamon

1/4 tsp Clove

1 tsp Coriander

1 tsp Turmeric

1 tsp Cumin

I go to a filling station shop, buy larger quantities, and have them put into the same jam jar.

Method

  1. Gently fry the onion in the oil until translucent with a lid on the pan.
  2. Add the spice mixture and continue to gently fry until you smell the aroma of spices.
  3. Add the swede and fry for a couple of minutes moving the mixture around in the pan so that it doesn’t stick and the swede gets coated in the spice and onion mixture.
  4. Add the stock.  Bring to a gentle boil and cover. Gently simmer for approx 30 minutes or until the swede is cooked when tested with a fork.
  5. Turn off the heat and let it cool down a bit.  Put it into blender/smoothie maker in batches and then return to the pan to gently reheat.  Taste it and add salt/pepper if needed.  Then serve.
