Nutty Onion Flan recipe
(Actually better with leeks rather than onions when they are in season)
Ingredients
Base
125g ground almonds
125g strong cheddar, grated
175g wholemeal breadcrumbs
Pinch chilli powder
1 – 2 tblsp vegetable oil
Filling
1 tblsp vegetable oil
500g chopped onions (or leeks)
1 tsp wholemeal flour
1 tsp french mustard
2 tsp lemon juice
2 eggs, beaten
300ml natural yoghurt
3 tblsp chopped parsley
Method
For the base, mix almonds, cheese, breadcrumbs and chilli powder together. Add enough oil to make a light crumble. Press the mixture into a 25cm flan ring and bake for 10 minutes at Gas Mark 6, 400F, 200C.
For the filling fry the onion in the oil for 10 mins, then add the flour and cook for 2-3 mins. Remove from the heat. Stir in the rest of the ingredients and mix. Spoon into the flan and bake for 20 mins at Gas Mark 6, 400F, 200C. Serve hot or cold.
