Fava bean puree

How to use our fava beans grown on the field. Thanks to Marianna Leivaditaki of The Observer who suggests having the puree with a boiled egg, black olives, red onion and parsley. Eat hot or cold with any kind of flatbread or crispbread. Thanks to Jane, for this.

Ingredients

  • 200g fava beans
  • 1L water, you may need more
  • 1/2 white onion
  • 2 bay leaves
  • salt
  • 200ml olive oil
  • a squeeze of lemon for serving

Method

  1. Wash the bean in cold water in a sieve
  2. Put the beans in a pan with the water, bay leaves and onions – bring to the boil and then simmer gently for 30-40 minutes, stir occasionally to stop any beans from sticking to the bottom of the pan.
  3. When the beans start to look like a puree add the olive oil and salt, according to your taste, and cook gently for a further 10 minutes.
  4. Remove the onion and bay leaves and serve with lemon and the above suggestions or your favourite salad ingredients
