Fava bean puree
How to use our fava beans grown on the field. Thanks to Marianna Leivaditaki of The Observer who suggests having the puree with a boiled egg, black olives, red onion and parsley. Eat hot or cold with any kind of flatbread or crispbread. Thanks to Jane, for this.
Ingredients
- 200g fava beans
- 1L water, you may need more
- 1/2 white onion
- 2 bay leaves
- salt
- 200ml olive oil
- a squeeze of lemon for serving
Method
- Wash the bean in cold water in a sieve
- Put the beans in a pan with the water, bay leaves and onions – bring to the boil and then simmer gently for 30-40 minutes, stir occasionally to stop any beans from sticking to the bottom of the pan.
- When the beans start to look like a puree add the olive oil and salt, according to your taste, and cook gently for a further 10 minutes.
- Remove the onion and bay leaves and serve with lemon and the above suggestions or your favourite salad ingredients
